A fabulous healthy ice cream – while I used an ice cream maker you really do not need one for this recipe. It is super easy to assemble and perfect for the Summer Peach Season. I used a vanilla coconut yogurt for this recipe but you could just sub plain yogurt and add extra vanilla too. For an extra protein boost why not add a scoop of vanilla protein powder when blending. Vegan Roasted Peach Yogurt Ice Cream

What’s Good About It?

Using yogurt is a fabulous way to get more probiotic rich foods in your diet. Peaches are a great source of vitamin C, antioxidants and loads of soluble fibre making this the ideal gut healthy dish.

 

 

Preheat the oven to 190C, Gas mark 5.

Slice the peaches into wedges.  Place on a lined baking tray and roast in the oven for 15 minutes. Allow to cool

Place the peaches and the remaining ingredients in a food processor or blender and process until smooth.

Pour into an ice cream maker and churn according to the instructions. Alternatively pour into a freezer proof shallow container and freeze until firm.

Did You Know?

The addition of the amaretto is optional but helps to keep the ice cream softer and less icy when freezing.

1 x 400g can coconut milk

2tsp vanilla extract

2tsp amaretto – optional

30g vanilla protein powder, optional

2tbsp maple syrup or sweet freedom
