This recipe takes just minutes to prepare and tastes heavenly!  By using erythritol you can also keep the carbs and sugar really low. Its rich and creamy so a small amount goes a long way. You can also add a scoop of vanilla protein powder to make it perfect as a post workout treat too. What’s good about it?

A great low sugar dessert rich in healthy fats and protein with the addition of cashew nuts and coconut oil. Using erythritol keeps the carbs low – with only 6% of the calories of sugar, it still has 70% of the sweetness making it ideal for use in cooking and raw desserts.

  1. Melt the cacao butter and coconut oil in a pan with the erythritol to allow it to dissolve.
  2. Place all the ingredients in a high speed blender and process until smooth and creamy
  3. Spoon the mixture into bowls and chill for 30 minutes to firm up.
  4. Top with chocolate buckwheaties, ctirus zest or berries to serve.

70g cashew nuts (soaked in water for 1 hour then drained)
