I love nut drinks and this version is ideal as a festive alternative to Eggnog. Adding a spoonful of coconut oil makes this drink incredibly creamy. I love using Bulletproof Brain Octane Oil which is particularly rich in medium chain triglycerides. You can vary the nuts – I think the use of pecan makes it taste buttery but almonds and cashews are also good.  A spoonful of lucuma powder also helps to create a lovely caramel like flavour. Warm this up for a delicious bedtime treat.

What’s good about it?

The pecan, a species of hickory, is native to the southern parts of North America.  Pecans provide plenty of heart healthy monounsaturated fats and protein. They are also an excellent source of fibre, Vitamin E, manganese and magnesium.  Just one ounce of pecans contains 3g fibre – the same as in 3 slices of white bread. In addition, they contain plant sterols and phenols, these are plant compounds known for their heart healthy benefits. Pecans are a great energising snack too – containing iron and the amino acid L arginine which can help improve blood flow and exercise performance.

INSTRUCTIONS

  1. Simply place all the ingredients in a high speed blender and process until smooth and creamy.  For a smoother texture you can strain the mixture.
  2. For a warming drink simply place in a pan and warm through.
  3. Pour into glasses or mugs and sprinkle a little ground cinnamon on the top to serve.

50g soft dates, pitted

1tsp vanilla extract

1tbsp lucuma powder

250ml coconut water or for a creamy texture use almond milk
