Coconut flour pancakes are a wonderful paleo breakfast or snack option. The addition of baking powder helps keep the mixture light and fluffy. These can be prepared in advance and warmed when needed. You can blend in some blueberries or fold them into the batter if wished or simply top with fresh berries.

Coconut flour is rich in soluble fibre making it ideal for supporting digestive health and keeping you feel fuller for longer avoiding crashes in blood sugar.

 

 

 

  1. Place everything in a nutri bullet or blender and process until smooth
  2. If the mixture is too thick add a little more coconut milk – you want to get a thick pourable batter.
  3. Heat a little coconut oil in a frying pan. Place spoonfuls of the mixture in the pan and cook on each side for 2-3 minutes until golden.
  4. Serve with coconut syrup, yacon syrup or maple syrup and fresh berries

Coconut flour absorbs a lot of liquid so alter the amount of coconut milk just to make a thick smooth batter.

30g coconut flour

1/2 tsp baking powder

pinch of sea salt

75-100ml coconut milk or nut milk

2 eggs, beaten

2tbsp coconut butter

1tsp vanilla extract

1tbsp xylitol

To serve: berries / yacon syrup or maple syrup
