Five minute Creamy Berry Mousse

What’s good about it?

This filling dessert is naturally sweet and protein packed with the addition of protein powder and nuts. Acai berry powder is exceptionally high in antioxidants and vitamin C to protect the cells from damage. Wonderful for skin too as vitamin C is essential for the production of collagen.

  1. If using frozen berries allow them to thaw for a couple of minutes to make them easier to blend.
  2. Place all the ingredients in a high speed blender and process until smooth and creamy.
  3. Spoon the mousse into little glasses or bowls.
  4. Top with a few berries if wished to serve.

Macadamia nuts are deliciously creamy and make an excellent nutritious replacement for dairy in recipes. They are also a great source of healthy monounsaturated fats plus fibre and protein making them a filling, satisfying option

 

50g vanilla protein powder, whey, pea, hemp etc

½ tsp acai powder or goji berry powder

225g mixed berries fresh or frozen

100g coconut oil, melted

100g macadamia nuts

1tsp vanilla extract

Juice of 1 orange

30g xylitol or granulated stevia, optional
