What’s Good About It?

Using broccoli in salads is a great way to cram in more cruciferous vegetables in your diet which are packed with powerful antioxidants, vitamins and minerals. Vary the ingredients according to taste.

 

  1. Make up the Supergreen Dressing – this can be kept in the fridge for up to 5 days
  2. Combine all the ingredients for the salad in a bowl and toss in a couple of tbsp of the dressing to serve

Did You Know?

This is a great recipe for using up leftover cooked veggies from the night before. Vary the ingredients – fennel, sugar snap peas, cooked green beans would also work well.
