Broccoli Tahini Soup

What’s Good About It?

Broccoli is a great source of soluble fibre and antioxidants which together help to support beneficial bacteria in the gut. The fibre also helps to stabilise blood sugar levels and keep you feeling fuller for longer.

 

 

  1. Heat the oil in a saucepan and saute the onion, garlic and ginger for 3-4 minutes.
  2. Add the remaining ingredients. Bring to the boil then cover and simmer gently for 10-12 minutes until the broccoli is tender.
  3. Puree the soup until smooth and creamy.
  4. Season to taste
  5. Mix together the ingredients for the topping. Spoon the soup into bowls then top with the tahini cream.

For a thicker soup blend in a can of butterbeans. This will also provide additional protein.

1 x 400g can low fat coconut milk

200ml vegetable stock

Salt and pepper to taste

1tbsp lemon juice
