10 Recipes for Veganuary

Here’s a great option for breakfast – a green smoothie bowl. Rich and creamy and packed with protein this is a perfect way to energise the day. Top with your favourite nuts and seeds and fruit or use a homemade granola instead.

A satisfying breakfast cereal or healthy snack. This pumpkin granola is paleo and vegan friendly. Using a combination of nuts and seeds provides plenty of protein, healthy fats and fibre to keep you feeling full through the morning.

 

Fancy a comfort bowl of goodness? This is a lovely vegan comfort dish. Using butternut squash and nutritional yeast flakes creates a delicious rich vegan version of a cheese sauce, which is tossed in gluten free pasta to make a vegan version of mac and cheese.

 

This is such a simple vegan Waldorf style salad – rich and creamy and perfect for a filling and nourishing lunch. I also find this is a big hit with children too. The combination of sweet apples and grapes with a nut dressing and crunchy celery plus plenty of greens makes this a hearty filling option.

 

This courgette & carrot spaghetti with red pepper and tomato sauce is a fabulous low carb, warming dish and perfect for boosting your intake of veggies. The sauce is packed with flavour and delicious with rice and pasta too.

 

Here’s a delicious healthy snack with cauliflower. These spicy cauliflower bites are simple to make and delicious served warm or cold especially with a homemade tomato sauce.

 

This vibrant salad contains avocado, sea vegetables and sprouted seeds for an energising dish. The orange dressing is delicious drizzled over steamed vegetables too.

 

 

I love raw cheesecakes – this raw berry lemon cheesecake is simple to make and you can freeze it for a frozen dessert too. Using xylitol helps keep the sugar content down too.

 

Many gluten free breads contain eggs or butter to help bind the flour and keep it moist. This fabulous Seeded Bread is gluten free and vegan and tastes amazing. Easy to make and you can slice and freeze it too.

Fancy a healthy blondie?  These vegan and gluten free blondies contain nut butter to keep them moist and creamy. Packed with flavour these make a perfect healthy treat.
