Looking for a sweet moist bread recipe?  This is delicious and so quick and simple to make. Simply blend the wet ingredients into the dry flours then pour into a loaf time and bake. Vary the berries according to what you have available. You can use fresh berries instead of dry but you may need to cook it for an extra 10 minutes as it will be softer. I often add a spoonful of goji berry powder and goji berries for an antioxidant hit.  Delicious as a snack or breakfast option.

INSTRUCTIONS

Preheat the oven to 180C, gas mark 4. Grease and line a loaf pan. Place all the dry ingredients (except the dried fruit) in a food processor and combine. Blend the eggs, oil, pear and syrup until smooth. Pour the wet ingredients into the food processor and mix well. Stir in the berries. Pour the batter into the loaf tin. Bake for 40-45 minutes until golden brown and cooked through. Leave to cool in the tin for 5 minutes before turning out onto a wire rack.

55g coconut flour

50g arrowroot powder

2tsp baking powder

1/2 tsp bicarbonate of soda

pinch of sea salt

1tbsp goji berry powder

2tsp ground cinnamon

4 organic / free range eggs

60g coconut oil, melted

1 ripe pear, chopped

50g coconut syrup

50g dried berries (cranberries, blueberries, goldenberries, goji etc)
